V-Ray has the ability for object properties, which will allow you to create an V-Ray Object Properties Node in Maya giving you unique render overrides for objects when you are working with Render Layers in Maya.

Arvid Schneider shows how it is possible to set overrides on multiple objects or meshes in Maya using the Vray Object Properties.

This Tutorial will show you how to set up render layers correctly using Vray Object Properties. It is a very convenient method of overriding several meshes at once using VOP (Vray Object Properties)

Here, Arvid also shows a method for setting render layers correctly when you choose to use the Vray Object Properties showing settings for Primary Visibility, Visible in Reflections and Refractions and more.

The VRayObjectProperties Node is found under the Create V-Ray Menu, and provides additional settings in the render settings panel allowing you to set different render settings on a per-object basis.
