Two-sided materials often are used when you need to have different materials for both sides of a flat object. Usually used when creating things like printed paper or money, double-sided shaders can also be helpful for things like leaves and special effects. Arnold Render recently included a new node that handles this type of shading, the aiTwoSided Node.
